{"id":20568,"date":"2015-11-17T18:00:10","date_gmt":"2015-11-18T00:00:10","guid":{"rendered":"http:\/\/news.medill.northwestern.edu\/chicago\/?p=20568"},"modified":"2015-11-17T18:00:10","modified_gmt":"2015-11-18T00:00:10","slug":"a-museum-that-moves-your-appetite","status":"publish","type":"post","link":"https:\/\/news.medill.northwestern.edu\/chicago\/a-museum-that-moves-your-appetite\/","title":{"rendered":"A museum that moves your appetite"},"content":{"rendered":"<p>By Ashley Altus<\/p>\n<p>Foodseum\u2019s mission is to excite Chicago\u2019s passion for food.<\/p>\n<p><a href=\"http:\/\/foodseum.org\">Foodseum<\/a>, a museum on the move, opened its first pop-up exhibit at <a href=\"http:\/\/blockthirtyseven.com\/\">Block 37<\/a> paying homage to the hot dog and encased meats of the world.<\/p>\n<p><!--more--><\/p>\n<p><iframe title=\"Foodseum\" src=\"https:\/\/player.vimeo.com\/video\/146049213?dnt=1&amp;app_id=122963\" width=\"800\" height=\"450\" frameborder=\"0\" allow=\"autoplay; fullscreen\" allowfullscreen><\/iframe><\/p>\n<p>Ed Lesnak, 75, and his family have embraced this food theme for generations. \u00a0He\u2019s been making sausage all his life. His father taught him how, he said. He taught his son John Lesnak, 46, who passed the practice on to his children.<\/p>\n<p>They made the trip from Kenosha, Wisconsin, because of their love of sausage after finding out about Foodseum in a newspaper advertisement. Seeing the traditional tools on display made them feel a connection to their own sausage making.<\/p>\n<p>\u201cIf I wanted to use the machines I\u2019d be very familiar with it,\u201d Ed Lesnak said. \u201cMy dad made sausage. I know what every one of them does and how it works so it\u2019s interesting to see.\u201d<\/p>\n<p>Although they use electric grinders instead of hand grinders to make their delicious pork sausages, John Lesnak said he appreciated how all the tools needed to make sausage were present at the museum.<\/p>\n<p>\u201cIf you went down to the supermarket and got us some pork right now he [Ed] and I could knock out some sausage,\u201d John said.<\/p>\n<p>Kyle Joseph, founder and executive director of Foodseum, discovered his passion for food as a child growing up part of his life in Europe.<\/p>\n<p>\u201cI got to grow up experiencing different cultures and one of my favorite things was to connect to a culture and learn about someone through food,\u201d Joseph said.<\/p>\n<p>From Mexican chorizo sausage made with chili peppers, garlic, oregano and cumin to French andouille sausage made with cayenne, thyme, paprika and sage, Joseph provides museum visitors the opportunity to learn about the ingredients used to make sausages from around the world. Tastings of sausage vary from day to day. (Ashley Altus\/Medill)<\/figcaption><\/figure><\/div><\/div>\n<p>Joseph said one of the hopes for a permanent location would be to have a show kitchen. \u00a0He envisions a space that would allow for food events and festivals and would like to remain downtown in the Loop.<\/p>\n<p>\u201cGive them a center place to come together as a food community,\u201d Joseph said.<\/p>\n<p>Joseph estimates about 2,000 people have walked through the free\u00a0 exhibit and hopes that 5,000 people will come in before the exhibit closes on December 20.<\/p>\n<p>The next food adventure he\u2019s planning as a pop-up will celebrate chocolate.
