New Orleans is known for its rich history, culture and cuisine. From jambalaya to shrimp and grits, these well-known dishes are often paired with the words “Cajun” and “Creole” on restaurant menus. But what does “Cajun” and “Creole” actually mean? And what is the difference in food? Medill reporters went to Louisiana, the home of Cajun and Creole food, to learn what it’s about.
